Ube Jam Recipe

ube jamUbe is the Filipino word for purple yam. It contains pigments that give its violet color. An Ube is commonly made into jams and an ingredient of a fruity dessert called halo-halo.

Today, I will be sharing to you one of the foods I’ve tried cooking last month, the Ube Jam. Actually, I cooked this ube jam together with my classmates in my culinary arts class. This recipe is very economical and very easy to prepare because it doesn’t require so much of your time. So, here’s the recipe.

Ingredients:

2 kilos Ube (cooked in boiling water)
3 cups white sugar
½ cup margarine/butter (if you want your jam to be creamy, use butter instead)
1 can condensed milk (big)
1 can evaporated milk (big)
Cheese (optional)

Procedure:
1. Cook Ube until Tender. Peel it.
2. Mash Ube and set aside. You can mash your Ube using a fork, but for a smoother texture you can use a blender or a food processor.
3. Mix margarine/butter and sugar.
4. Add mashed Ube and milk.
5. Cook in a low fire, stirring constantly until thick.

Ube Jam is best served cold garnished with cheese on top. The cheese can augment the visual impact of the jam but it also adds a contrasting flavor which makes it more yummy. Others also love to pair the jam with bread just like on the photo above.

Pork Hamonda Recipe

A “Hamonada” is a Filipino dish that is usually served in Fiestas and other special occasions. You can commonly find this in small barrios as their main course during Fiestas because this dish doesn’t spoil fast. They can store this even without the refrigerator. A hamonada is sweet and tasty and you will surely love it. Below is the recipe.

Ingredients:

2 Kilos Upper Ham

4 cups pineapple juice

4 cups water

½ bottle beer

1 tbsp. pepper corns

1 cup brown sugar

2 pcs. Onion (cut into quarter)

2 tbsp.salt or 5 tbsp. soy sauce

 Procedure:

  1. Wash pork and make small slits using pointed knife, or ice pick. Be careful so that the knife will not reach the skin of the ham.
  2. Put Ham in a bowl and add all the ingredients. Rub for a few minutes.
  3. Put Ham in a kettle and pour the contents of a bowl into the kettle.
  4. Simmer until become tender. Usually this will take for about 2- 3 hours, if you will use pressure cooker you can cook it for 1 hour.
  5. When done, put in a platter and garnish with sliced pineapple, onion rings, and onion leaves.

 

Fish Ball Starter

This is the first recipe I’ve tried cooking. I’ve learned to cook this in my culinary arts class. This food is good for people who don’t like to eat pork. What’s good about this is that, it is very healthy and very economical. You might want to try cooking this. Here’s the recipe:

Ingredients:

400 g (14 oz) white fish fillet (wash the fish thoroughly)
3 cups water (for boiling)
1/2 meduim onion, finely chopped
1/4 cup chopped spring onions
3/4 cup flour
2 eggs, lightly beaten
1 tsp. salt
1/2 tsp. freshly ground black pepper
250 ml (1 cup) oil
wooden toothpicks (optional)

For the Sweet & Sour Sauce:
100g (1/2) cup sugar
1/2 tsp. salt
60 ml (1/4) cup tomato ketchup
125 ml (1/2 cup vinegar
2 tbsp. cornflour dissolved in 259 ml or 1 cup of water.

Procedure:
1.Clean the fish fillets well, making sure to remove any remaining fish bones.
2. Put water iin a pot and bring to boil.
3. Drop fillets into water & let it cook for about 5 minutes or until flesh is slightly firm but not flaky. Remove from water.
4. Mash fillets and mix with onions, garlic, spring onions, flour, eggs, season with salt and pepper. Mix thorougly to form a smooth batter. Shape the batter into small balls.
5. Heat the oil in a wok. Put the balls in one by one making sure each ball is completely submerged in the oil for even cooking. You may have to cook the balls by batches. Cook until fish balls are lightly brown.
6. Remove from heat and drain on paper towels.
7. Skewer 2 fish balls into toothpicks if desired and serve with sweet and sour sauce.

You can make about 30 fish ball starters. Preparation time is about 40 minutes and the cooking time is approximately 20 minutes.

How to prepare the Sweet & Sour Sauce:
1.Mix the sugar, salt, tomato ketchup, and vinegar in a saucepan.
2.Simmer over low heat until sugar dissolves. Stir in the cornflour and water mixture.
3. Simmer, stirring, occasionally until the sauce thickens.
Remove from heat and set aside.
