Pork Hamonada Recipe (Got Another One)

As everyone is preparing for the New Year I’m sure some of you might be preparing Pork Hamonada (Pork Hamonado) on the New Year’s Eve. In Luzon this dish is known as Pork Hamonado, but I’m just using the term that most people use here in Mindanao.

Four years ago, I made a Pork Hamonada dish which I learned from my culinary arts lessons. I even shared the recipe here. You can actually visit my first Pork Hamonda Recipe and you’ll find the detailed instruction on how to cook it.

This time I found another Pork Hamonada recipe which I found on my friend’s Facebook timeline. Since I was busy with my student’s activities in school, I asked my husband to try the newly found recipe.

Here’s the recipe:

Ingredients:

  • a slab of pork with fat
  • crushed garlic
  • 1/2 cup of soy sauce
  • 1 cup of fruit cocktail syrup
  • peppercorns
  • a dash of salt (optional)
  • 1 tablespoon sugar (optional)
  • Sring onion, cut into small ringlets for garnishing (optional)

Procedure:

1. Drop the pork slab into a large saucepan with just enough boiling water to cover and simmer.

2. Skin the surface until the broth is clear.

3. Skimmer for an hour then pour in soy sauce, fruit syrup and all the other ingredients.

4. Simmer with lid closed over low fire, turning the meat from time to time, for hours or until the rind quite literally melts in your mouth.

5. Leave a little sauce to moist the meat. Slice and serve with rice and blanched vegetables.

Note: If you don’t have fruit cocktail syrup, replace it with pineapple juice.

This recipe makes 4-6 servings. I like its tastes and it really is delicious.

Pineapple Jam Recipe

pineappleIngredients:

1 cup pineapple (chopped finely

¾ cup sugar

1 tsp. Calamansi Juice

Procedure:

  1. Prepare Pineapple. Remove eyes and core.
  2. Measure finely, chop pineapple and put into pan.
  3. Add Calamansi and Sugar.
  4. Place pan on low fire; continue stirring until Jam consistency is attained.
  5. Pour into sterilized jar. Let it cool and seal tightly.

Note:

For better result, use porcelain pan and wooden laddle.

Banana Chips

Banana chips are deep fried slices of unripe bananas, covered with sugar or honey. The chips are crispy and have a sweet taste. But when I was in Thailand, it was my first time to have tasted a salty banana chips. Instead of covering the banana chips with sugar, you can have the salt for a variety.

banana chipsToday, I will be sharing to you a banana chips that is covered with sugar. As you will see in the photo, the banana chip has a glossy look because of the sugar on it. Actually, I haven’t copied the recipe for this but I will just give you what I have observed while my classmates were cooking this one.

Ingredients:

-Unripe Bananas (in the Philippines, the “Saba” type of banana is usually good for this kind of cooking)

– Cooking Oil

– Sugar

– Water

Procedure:

  1. Heat the oil in a pan.
  2. Deep fry the bananas until golden brown.
  3. Place all the bananas in wide shallow container and set aside.
  4. In a jar, mix 1 cup of sugar and 3 cups of water and stir continuously.
  5. When the sugar has melted, pour the mixture on the fried bananas and mix thoroughly.
  6. Deep fry the bananas again for a few minutes.

There you go… this is very economical and perfect for daytime snacks.
